JO's Simple Lentil Soup
There’s nothing like a nourishing and comforting soup when it comes to comfort my go to is lentil soup. I love making it at least 1x week. Oh how simple and delicious it is. Check out my recipe!
Ingredients
2 tablespoons olive oil
1 medium onion (chopped)
3 cloves garlic (minced)
2 medium carrots (peeled and chopped)
2 celery ribs (chopped)
3 asparagus, chopped
1/2 head cauliflower, cut into florets
2 cups brown lentils or green
6 cups vegetable broth
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 tsp ground ginger
1 teaspoon salt (or to taste)
1 bayleaf
parsley for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the onions and garlic. cook for 2-min.
Add carrots and celery. Cook, stirring frequently for about 4-5 minutes. Add the asparagus and cauliflower and cook for another 3-5 minutes.
Add the lentils, vegetable broth, cumin, coriander and ginger. Stir to incorporate everything.
Bring to a boil, then lower heat to a simmer and cook for about 30 minutes, until the lentils are tender and the soup has thickened. Option to add water or more vegetable broth for a more brothy soup. Garnish with parsley. Sometimes I add some broccoli sprouts and some avocado too. Ready to eat
