PUMPKIN SPICED CHOCOLATE OAT GRANOLA
Who loves a good homemade granola? I know i do!! Not only does it taste yummy but it also adds some nice crunchy texture to a yogurt, cereal, and even smoothie bowls. Granola is very easy to make, cost effective, can improve digestion due to its fiber content, it can reduce LDL cholesterol levels, its rich in plant protein-depending on the ingredients you add. In this recipe nuts and seed are added, and its an awesome energy booster. If you haven’t made granola yet, you have to try this recipe! Its delicious!!!!
Toasted Spiced Chocolate Oat Granola
Yields 3-4 cups of Granola
Time: 45 minutes
Ingredients:
1 1/2 cups GF Organic Whole Thick Oats (Bob’s Red Mill)
1/2 cup Shredded Coconut
1/2 cup raw Almonds, chopped
1/2 cup raw pecans, chopped
1/2 cup raw brazil nuts, chopped
1/2 cup whole flax seeds
1 Tbsp pumpkin Spice
3 Tbs Coconut Oil
1/4 cup Maple syrup (optional)
1 tsp sea salt
1 tsp vanilla extract
Topping
1/2 cup Goji Berries
12 cup Dark Chocolate chips (70%)
Instructions:
Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
In a large mixing bowl, combine the oats, nuts , salt, shredded coconut, flax seeds, and pumpkin spice. Mix
Add the coconut oil, maple syrup, and vanilla extract. Mix well, until every oat and nut is lightly coated. Pour the granola onto the parchment paper pan.
Bake until lightly golden, about 20-25 minutes.
Don’t stir the granola.
Remove the granola and let it cool down for 10-15 minutes. Add the dark
Break up the granola with your hands and chocolate chips and goji berries.
Store the granola in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for 1 month.
